SPAM Fried Rice

SPAM fried rice is the ultimate fridge-clearing, pantry-hero dinner that hits every single time🍳🌶️ crispy SPAM, day-old rice, shiitake mushrooms, carrot, jalapeño, red onion, and eggs all stir fried together on high heat until smoky and deeply savory. serve it with kimchi and a drizzle of sriracha and it's absolutely perfect. 🫶

Ingredients

  • 1 can SPAM, cut into small cubes

  • 3 cups day-old cooked jasmine rice

  • 2 eggs, beaten

  • 1 cup shiitake mushrooms, diced

  • 1 medium carrot, finely diced

  • 1 small red onion, diced

  • 1 jalapeño, sliced

  • 3 cloves garlic, minced

  • 3 green onions, cut into 1-inch pieces

Fried rice sauce:

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tsp sesame oil

  • 1 tbsp avocado oil (or any neutral oil)

  • Salt & pepper to taste

Cook time ~15 mins


Cooking Instructions

WASH YOUR VEGGIES

  • Wash and prep your carrot, jalapeño, and green onions before getting started.

Stir fry spam and veggies

  • Heat a wok or large skillet over medium-high heat with a little avocado oil. Add the beaten eggs and cook 90% through. Remove and set aside.

  • In the same wok or skillet, add spam cubes and cook, stirring occasionally, for 3–4 min until golden and crispy on all sides. Remove and set aside with the eggs.

  • Add a little more avocado oil and increase heat to high. Add garlic and cook 30 seconds. Add red onion, carrot, and shiitake mushrooms — stir fry 3–4 min until softened.

  • Add jalapeño and green onion and toss for 1 min.

Add the rice

  • Add day-old rice and break up any clumps. Stir fry on high heat for 2–3 min, pressing rice against the pan to get some color.

Season and finish

  • Add the fried rice sauce and toss everything together until evenly coated and fragrant.

  • Return eggs and spam to the pan and give it one final toss. Taste and adjust seasoning.

Tips & Notes

  • Day-old cold rice is non-negotiable — fresh rice has too much moisture and will steam instead of fry.

    • i like making spam fried rice when i have 2-3 day old rice to use!

  • Crisp the SPAM separately and add back at the end so it stays crunchy and doesn't get soggy in the rice.

  • Oyster sauce adds a subtle sweetness and depth — don't substitute with more soy sauce.

  • SPAM is already salty — taste before adding any extra salt.

  • Elevate the dish with some kimchi and siracha or chili crips!
