Miso Mushroom Bake

if you love mushrooms, this one's for you πŸ„βœ¨ a mix of shiitake, enoki, and beech mushrooms get tossed in a miso butter sauce, wrapped up in foil, and baked until tender and deeply savory. it's basically a flavor bomb in a packet with almost no clean up. great as a side or spoon it over rice for a full meal 🫢

Ingredients

  • 2 cups mixed mushrooms (shiitake, enoki, beech, oyster)

  • 1/2 onion, sliced

  • 2-3 garlic cloves, minced

  • 1 tbsp butter

  • 1 tbsp miso paste

  • 1 tbsp soy sauce

  • 1 tbsp mirin

  • Green onion, sliced, to garnish

Cook time ~15-35mins


Cooking Instructions

  • If you're using an oven, preheat oven to 350 degrees.

  • Place aluminum foil on a sheet pan, add mushrooms, onions, garlic, soy sauce, mirin, miso, butter. Mix everything together.

  • Fold the foil together to form an enclosed pouch to prevent sauce from spilling out.

  • If you're using an air fryer, cook for 15-18 mins on 350 degrees. If you're using an oven, bake for 30-35 mins.

  • Let cool for 3-5 mins after it's cooked.

Tips & Notes

  • Mix different mushroom varieties for the best texture β€” some chewy, some delicate

  • Trim and separate clusters (enoki, beech) so they cook evenly

  • Melt the miso butter slightly before tossing for even coating

  • Double-wrap the foil so the packet doesn't leak in the air fryer or oven

  • Open carefully β€” steam escapes fast and it's hot!

  • Great over rice, with grilled meat, or as a side for KBBQ night!
