Middle Eastern Style Meatballs

these spicy lamb meatballs are packed with flavor 🌶️ — warm spices, garlic, and a kick of heat, seared until deeply caramelized on the outside and juicy inside. fresh, filling, and so satisfying 🫶

Ingredients

  • 1 lb ground lamb

  • 1 lb ground beef

  • 1/4 cup parsley, chopped

  • 1/4 cup cilantro, chopped

  • 3-4 garlic cloves, minced

  • 1/2 sweet onion, grated

  • 3 tbsp harissa

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp ground ginger

  • 1 tsp smoked paprika

  • 1/2 tsp ground tumeric

  • 2 tsp salt

  • 2 tbsp avocado oil


Serves 2-4

Cook time ~30mins


Cooking Instructions

  • To a bowl, combine the ground lamb, parsley, cilantro, garlic, harissa, coriander, cumin, ginger, salt, paprika, and turmeric.

  • Shape into balls, about 2 tablespoons each. Heat a pan (cast iron if you have one for a nice crust) over medium heat with a drizzle of avocado oil.

  • Carefully add the meatballs to your pan, making sure they are spaced apart.

  • Sear on one side for ~3 minutes, and then rotate to sear the other side. Continue rotating until the center is cooked through.

  • Remove from heat and assemble your bowl with your choice of carb & assorted veggies!

Tips & Notes

  • Don't overmix the meat — it can get dense and tough

  • Sear on medium-high for a deep caramelized crust, then lower heat to finish cooking through

  • Toss the warm couscous with olive oil, lemon juice, and parsley right after cooking so it absorbs the flavor

  • Chop all the salad veggies the same size for easy bites in every spoonful

  • Great with a dollop of tzatziki or hummus on the side

  • Leftnovers reheat well — great for meal prep bowls
