Middle Eastern Style Meatballs
these spicy lamb meatballs are packed with flavor 🌶️ — warm spices, garlic, and a kick of heat, seared until deeply caramelized on the outside and juicy inside. fresh, filling, and so satisfying 🫶
Ingredients
1 lb ground lamb
1 lb ground beef
1/4 cup parsley, chopped
1/4 cup cilantro, chopped
3-4 garlic cloves, minced
1/2 sweet onion, grated
3 tbsp harissa
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground ginger
1 tsp smoked paprika
1/2 tsp ground tumeric
2 tsp salt
2 tbsp avocado oil
Serves 2-4

Cooking Instructions
To a bowl, combine the ground lamb, parsley, cilantro, garlic, harissa, coriander, cumin, ginger, salt, paprika, and turmeric.
Shape into balls, about 2 tablespoons each. Heat a pan (cast iron if you have one for a nice crust) over medium heat with a drizzle of avocado oil.
Carefully add the meatballs to your pan, making sure they are spaced apart.
Sear on one side for ~3 minutes, and then rotate to sear the other side. Continue rotating until the center is cooked through.
Remove from heat and assemble your bowl with your choice of carb & assorted veggies!
Tips & Notes
Don't overmix the meat — it can get dense and tough
Sear on medium-high for a deep caramelized crust, then lower heat to finish cooking through
Toss the warm couscous with olive oil, lemon juice, and parsley right after cooking so it absorbs the flavor
Chop all the salad veggies the same size for easy bites in every spoonful
Great with a dollop of tzatziki or hummus on the side
