Foil Packet Salmon with Summer Squash & Zucchini

Ingredients

  • 2 salmon fillets, skin-on

  • 1 medium yellow summer squash, sliced into rounds

  • 1 medium zucchini, sliced into rounds

  • 1/2 yellow onion, thinly sliced

  • 1 roma tomato, thinly sliced

  • 3 cloves garlic, minced

  • 2 tbsp butter, cut into small pieces

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • Fresh parsley, to garnish

Cooking Instructions

WASH YOUR VEGGIES

  • Wash and prep your squash, zucchini, onion, tomato, and parsley before getting started.

Build the foil packet

  • Lay a large sheet of foil on a flat surface. Layer sliced squash, zucchini, onion and tomato in the center. Season the vegetables with salt, pepper, and minced garlic.

  • Place salmon fillets on top of the vegetables, skin-side down. Season with smoked paprika, garlic powder, salt, and pepper. Dot with butter pieces.

  • Fold the foil up and over, sealing tightly into a packet so no steam escapes.

Air fry

  • Place the sealed foil packet in the air fryer basket. Air fry at 400°F for 10-12 mins until salmon is cooked through and flakes easily. Cooking time will vary slightly depending on the thickness of your fillets.

  • Carefully open the packet — steam will escape fast, so open away from you.

Plate and serve

  • Transfer the squash and zucchini to a plate as the base. Place salmon on top. Garnish with fresh parsley and serve with sliced tomato on the side.

Tips & Notes

  • You might have extra squash and zucchini, save it for a veg side for lunch!

  • Double the foil if you're worried about leaks — two layers is always safer for foil packets.

  • Slice veggies thin and even so they cook through in the same time as the salmon.

  • The butter melts into the vegetables and creates a little sauce in the packet — don't skip it.

  • For oven method: bake at 400°F for 15 mins instead.

  • Salmon is done when it flakes easily with a fork and reaches an internal temp of 145°F.
