Bibim Guksu

bibim guksu, Korean cold spicy noodles, is one of my favorite quick summer lunches, especially when its 100+ degrees outside 🍜🌢️ somyeon noodles tossed in a sweet, tangy, spicy gochujang sauce, topped with crisp cucumber, kimchi, and a jammy egg 🫢

Ingredients

Noodles

  • 1 bundle of somyeon (thin wheat noodles)

Sauce

  • 2 tbsp gochujang

  • 1 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp brown sugar

  • 1 tsp gochugaru

  • 1 tbsp sesame oil

  • 2 cloves garlic, minced

Toppings

  • 1 mini cucumber, julienned

  • ΒΌ cup kimchi, roughly chopped

  • 1 soft boiled egg, halved

  • 1 green onion, thinly sliced

  • 1 tsp sesame seeds


Serves 1-2

Prep time ~10 mins

Cook time ~6 mins


Cooking Instructions

WASH YOUR VEGGIES

  • Wash and prep your cucumber before getting started.

Make the sauce

  • In a small bowl, whisk together gochujang, soy sauce, rice vinegar, brown sugar, gochugaru, sesame oil, and garlic until smooth.

Cook the noodles & egg

  • In a small pot, bring water to a bowl, add eggs and cook for 6.5 mins for a jammy egg.

  • While the egg is cooking, prep an ice cold bowl. Once the egg timer goes off, immediately add to the ice bath.

  • Bring another pot of water to a boil to cook the somyeon noodles. Cook for 4 minutes, stirring occasionally, until just tender.

  • Drain and immediately rinse under cold water, rubbing the noodles gently to remove excess starch, until fully cooled.

Toss and assemble

  • Add drained noodles to a large bowl and pour the sauce over. Toss well until every strand is coated.

  • Top with julienned cucumber, kimchi, green onion, and soft boiled egg.

  • Finish with a sprinkle of sesame seeds and serve immediately.

Tips & Notes

  • Rinsing the noodles under cold water is non-negotiable β€” it stops the cooking and keeps them from turning gummy.

  • Adjust the gochugaru up or down depending on how spicy you like it.

  • No somyeon on hand? Somen noodles works just as well!

  • This one doesn't sit well as leftovers β€” the noodles soak up the sauce and turn mushy, so make it fresh and eat right away.

  • Want it heartier? Add shredded rotisserie chicken or a few slices of Spam on top!
