Lemon Pepper Wings & Old Bay Fries

some nights you just need wings and fries and zero explanations ๐Ÿ‹๐Ÿ–ค lemon pepper is THAT seasoning โ€” zesty, buttery, and it hits different when you make it from scratch. paired with old bay fries because the combo is simply undefeated. save this one for your next game night, lazy Sunday, or honestly just a Tuesday. ๐ŸคŒ

Ingredients

Wings

  • 2 lbs chicken wings

  • 1 tbsp baking powder

  • 1 tbsp avocado oil

  • 3 tbsp lemon pepper seasoning

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp salt

Old Bay Fries

  • 1-2 medium to large russet potatoes

  • 1 cup avocado oil (to fry)

  • 1.5 tbsp Old Bay seasoning


Serves 2-4

Prep time ~10mins

Cook time ~45mins


Cooking Instructions

Old Bay Fries - we double fry in this house!

  • Heat up avocado oil to medium (level ~4-5) in a pan or cast iron.

  • Cut potatoes into thin strips. Depending on how thick they are, frying timing may differ.

  • Slowly add fries to the hot pan. Do not over crowd and make sure all the fries are covered by the oil. Carefully separate them as needed while they fry for about 8 mins.

  • If they start to brown quickly, turn down your heat a notch or take the out around 5-6 mins. They should look very light brown, no deep coloring yet!

  • Remove from oil and set aside on a baking sheet with a wire rack or a plate with paper towels.

  • Since I do them in batches, repeat steps 3-5.

  • For the 2nd round - turn up the heat a notch and re-fry them in the same batches for 3-5 mins. They will begin to brown - pull them out at your preferred crispiness.

  • While hot, sprinkle generously with old bay. Since these will be done in batches, donโ€™t over sprinkle as you layer on more fries and seasoning.

Lemon Pepper Wings

  • Pat wings dry with paper towels. Toss with baking powder and let sit for 5 mins.

  • Add avocado oil, lemon pepper, garlic powder, onion powder, and salt.

  • Air fry at 400 for 10 mins, flip, then turn up to 450 for 15mins.

  • Sprinkle more seasoning right after pulling wings from the air fryer or oven while hot

  • Serve alongside old bay fries and enjoy!

Tips & Notes

  • Should I peel my potato?

    • Personally I love a skin-on fry, I think it makes it crisper, but it also contains nutrients - why waste it?

  • How important is it to pat wings completely dry?

    • Most recipes will tell you to soak your potatoesโ€ฆ Iโ€™ve never done that because who has time to do that and waste paper towels drying them allโ€ฆ

  • My secret to crispy fries is to double fry!!

  • Baking powder is the secret to crispy wings โ€” don't skip it

  • Add a pinch of cayenne to the wing seasoning for heat lovers ๐ŸŒถ

  • Serve with ranch (my personal favorite) or chick-fil-a sauce (my husbands favorite)
