Lavender Vanilla Syrup & Earl Grey Infused Milk

this is my homemade coffee shop upgrade 🫖💜 a floral lavender vanilla syrup paired with earl grey infused milk and an espresso, you’ve just made yourself a dirty London fog latte. make a batch of each and keep them in the fridge for the week. 🫶

Ingredients

Lavender Vanilla Syrup

  • 1 cup water

  • 1/2 cup honey

  • 3 tbsp dried culinary lavender

  • 1 tsp vanilla bean paste

Earl Grey Infused Milk

  • 16 oz preferred milk

  • 2 earl grey tea bags


Prep time ~5 mins

Cook time ~15 mins - overnight


Cooking Instructions

Make the syrup

  • In a small saucepan, combine water, honey, and dried lavender. Bring to a gentle simmer over medium heat, stirring until the honey dissolves.

  • Remove from heat and let steep for 10 minutes.

  • Strain out the lavender buds, then stir in the vanilla bean paste.

  • Let cool, then transfer to a jar or airtight container.

Infuse the milk

  • In a 16 oz mason jar add milk and the 3 earl grey tea bags.

  • Store overnight in the fridge.

Dirty london fog (iced)

  • Brew a double shot of espresso - I like a shaken iced latte so i use a mason jar. I brew the espresso directly into the glass.

  • Add 2 tbsp of lavender vanilla syrup and a lot of ice.

  • Close the lid and shake the jar - this is a great frothy technique and it cools the espresso.

  • Top off with early grey infused milk and enjoy!

Tips & Notes

  • Simple syrup is usually a 1:1 water to sweetener ratio but I don’t like mine too sweet. Adjust to your preference!

  • Culinary grade lavender is important here — the kind from a craft store isn't food safe.

  • Both the syrup and infused milk keep in the fridge for about a week in airtight containers.

  • This syrup is also great drizzled over pancakes, yogurt, or stirred into tea.

  • No vanilla bean paste on hand? Vanilla extract works as a 1:1 substitute.

  • Sugar also works - but I like using honey for a healthier alternative.
