Homemade Nut & Seed Granola

Ingredients

  • 3 ½ cups mixed nuts

    • roasted cashews, roughly chopped

    • walnuts, roughly chopped

    • pecans, roughly chopped

  • ¼ cup pumpkin seeds (pepitas)

  • ¼ cup chia seeds

  • ¼ cup white sesame seeds

  • ¼ cup black sesame seeds

  • 1/3 cup maple syrup

  • ¼ tsp salt

Optional add-ins

  • ¼ cup dried cranberries or cherries (add after baking)

  • ¼ cup dark chocolate chips

Cooking Instructions

Mix the granola

  • Preheat oven to 320°F. Line a baking sheet with parchment paper.

  • In a large bowl, combine all nuts and seeds. Add maple syrup and salt. Stir well until everything is evenly coated.

Bake

  • Spread the mixture onto the prepared baking sheet in an even layer, pressing it down firmly with a spatula — the more compacted it is, the better the clusters.

  • Bake at 320°F for 22 mins, rotating the pan halfway through, until deep golden brown. Keep an eye on it in the last 5 min — it can go from golden to burnt fast.

  • Do not stir while baking — this is what creates clusters.

Cool and break into clusters

  • Remove from the oven and let cool completely on the pan — at least 30 min. Don't touch it while it cools or the clusters won't set.

  • Once fully cooled, break into pieces.

  • Store in an airtight container at room temperature for up to 2 weeks.

Tips & Notes

  • Press the mixture down firmly before baking — this is the key to thick, chunky clusters.

  • Don't stir mid-bake — every time you stir you break up the clusters.

  • Let it cool completely before breaking — it hardens as it cools and that's what gives you the crunch.

  • 320°F is lower than most recipes but it toasts everything evenly without burning the seeds.

  • Add any dried fruit after baking — fruit in the oven gets too hard and chewy.

  • Easily customizable — swap in any nuts or seeds you have on hand!

  • Great on top of yogurt, with milk, or just eaten by the handful straight from the jar.
