Goi Cuon (Vietnamese spring roll)
gỏi cuốn (Vietnamese spring rolls) 🌿🐟 is typically made with shrimp and pork or with whole white fish, but that’s a lot of work for 2 people on a weekly basis. here’s my easy version with salmon, fresh herbs, and homemade nuoc cham. light, fresh, and somehow still satisfying. perfect when you want something that feels good without feeling like a salad 🫶
Ingredients
6–8 rice paper sheets
2-3 salmon fillets
1 tsp salt
1 tsp pepper
½ tsp garlic powder
6-8 banh hoi (rice noodles)
1 head of green leaf or red leaf lettuce
fresh herbs - mint, basil, vietnamese perilla (tia-to), fish mint
2 persian cucumbers, thinly sliced
½ cup cilantro, chopped
½ cup green onions, chopped
Optional: fried shallots
Nuoc Cham
½ cup of water, for boiling
¼ cup of sugar, for boiling
2 tablespoons of sugar
3 cloves of garlic
2 bird's eye chiles
3 tablespoons of fish sauce
3 tablespoons of lime juice, freshly squeezed
¼ cup of cold water

Cooking Instructions
Make the nuoc cham
In a small sauce pot, boil ½ cup of water with ¼ cup of sugar on low heat until it's completely dissolved. Set aside to cool.
Use a food processor to mince the garlic, 2 bird's eye chiles, and 2 tbsp of sugar until minced and combined.
Once the sugar water is cooled, combine with the minced mixture into a jar and stir well.
Add in the fish sauce and the lime juice, mix, then add in ¼ cup of cold water. Stir carefully.
Taste test - you might need to add more of one of the ingredients depending on how you like your sauce. For added sourness, add in lime juice. For added saltiness, add in fish sauce. For added sweetness, add sugar.
Prep salmon, rice noodles, and veggies
Wash all the lettuce, herbs, cucumbers, cilantro and green onions (this is probably the longest step if you have a lot of herbs)
Thinly slice the cucumbers, chop the cilantro and green onions
Season salmon with salt, pepper, and garlic powder. Air fry 8 mins until cooked through. Let cool slightly, then flake into pieces.
Make the banh hoi or rice noodles to the package instructions (i love banh hoi because it cooks in 1 min and 15 secs)
Roll the gỏi cuốn
Fill a wide shallow bowl or plate with warm water. Dip one rice paper sheet and rotate to get every surface wet (about 5-10 secs, do not let it sit!!). Lay flat on your plate.
This is how I layer: lettuce in the center, 1-2 slices of cucumbers, banh hoi/rice noodles, cilantro and green onions, optional fried shallots, flaked salmon, herbs on herbs on herbs!
I like to roll from the bottom up tightly first, then fold the sides in, then continue rolling tightly up.
Dip every bite with nuoc cham and enjoy!
