Charred Broccoli & Butter Bean Caesar Salad

charred broccoli caesar salad is what happens when your favorite salad gets a smoky upgrade 🥦✨ broccoli blistered until the edges go dark and crispy, tossed in a tahini caesar dressing loaded with butter beans, parmesan and dijon, topped with sardines and crunchy breadcrumbs. way more interesting than romaine.

Ingredients

Salad

  • 1 large head broccoli, cut into florets

  • 1 can butter bean, drained

  • 1 tbsp olive oil

Dressing

  • ¼ cup tahini

  • 3-4 anchovy fillets (in olive oil)

  • 1 tbsp dijon mustard

  • 1 tbsp whole grain mustard

  • 1 tsp worcestershire sauce

  • juice of 1 lemon

  • ¼ cup parmesan, grated

  • 1 tsp cracked black pepper

  • 2-3 tbsp water, to thin

To finish

  • ¼ cup toasted breadcrumbs

  • parmesan, grated, for topping

  • salt and pepper, to taste

Cooking Instructions

WASH YOUR VEGGIES

  • Wash and prep your veggies and herbs before getting started.

Char the broccoli

  • Cut broccoli into bit sized pieces, and add to a baking sheet in a single layer.

  • Drizzle olive oil and a pinch of salt and pepper. Don’t over salt, the dressing will bring flavor!

  • Broil for 8-10 mins, watch closely so it doesn’t burn too much. Set aside.

Make the dressing

  • In a medium bowl, add anchovies and a little bit of olive oil from the can, mash with a fork until it becomes a paste.

  • Then add tahini, dijon, whole grain mustard, worcestershire, lemon juice, parmesan, and black pepper. Mix until combined.

  • Add water a tablespoon at a time for the consistency you’re looking for.

Assemble

  • To the bowl of dressing, toss the charred broccoli and butter beans with the dressing until well coated.

  • Top with toasted breadcrumbs and a generous grating of parmesan. Serve warm.

Tips & Notes

  • Don't crowd the pan when charring the broccoli — give it space or it'll steam instead of char.

  • I like to add sardines for extra protein, can sub with chicken or tofu!

  • The dressing keeps in the fridge for up to 4 days — great to make ahead.

  • Swap butter beans for chickpeas or white beans if that's what you have on hand.

  • Best eaten right away while the broccoli is still warm and the breadcrumbs are crunchy.
