Breakfast Sammie
inspired by one of Austin coffee shops, Brew N Brew — their Son of a Bun sandwich lives rent free in my head🥯🍳 crispy bacon, scrambled egg, a hash brown patty, spinach, and a spicy sriracha mayo all stacked on a toasted bagel. 🫶
Ingredients
Sandwich
2 plain bagels, sliced and toasted
6 bacon strips
2 eggs, over medium (or to your preference)
2 frozen hash brown patties
1 cup fresh baby spinach
Salt & pepper to taste
Optional: Cheese
Spicy sriracha mayo
3 tbsp mayo
1 tbsp sriracha

Cook time ~20mins
Cooking Instructions
Make the spicy mayo
Whisk together mayo and sriracha. Taste and adjust heat. Set aside in the fridge.
Cook the hash browns & bacon
We air fry the frozen hash brown patties and bacon on the same pan
Hash browns: 400°F for 20 min, flipping half way. Bacon: remove when it’s cripsy to your preference
Cook the eggs
I prefer mine eggs fried and over medium, however, cook the eggs to your preference!
Scrambled: Crack eggs into a bowl, season with salt and pepper, and whisk well. Melt butter or oil and cook over medium-low heat with a little butter or oil, folding gently until just set and still slightly glossy.
Over Medium: Melt butter or oil in skillet over medium-low heat. Crack in the eggs, cook until the whites are mostly set (about 2-3 minutes), and flip. Cook for another 1-2 minutes until the whites are fully firm and the yolk is warm, jammy, and slightly runny.
Toast the bagels
Toast bagels cut-side down in the bacon pan or in a toaster until golden and slightly crispy.
Assemble
Spread spicy mayo generously on both cut sides of the bagel.
Layer in this order: hash brown patty, spinach, scrambled egg, bacon.
Close the bagel, press down gently, and serve immediately.
Tips & Notes
Air frying the hash brown patty — i like mine extra crispy!
Optional to add cheese: American cheese melts the best here — it's a breakfast sandwich, embrace it.
Make the spicy mayo ahead and keep it in the fridge — it gets better as it sits and you'll want it on everything.
